While gelato is the Italian word for ice cream, they are
actually quite different. Gelato is
creamier, smoother and silkier than ice cream. The main difference is that
gelato uses whole milk as a base while ice cream uses cream. This means gelato holds less fat, a different
consistently and richer flavors. Gelato is also churned at a much slower rate,
incorporating less air and leaving gelato denser than ice cream.
